Cellular Healing Diet for Ulcerative Colitis- Turnip Hashbrowns

Turnip Hashbrowns

1 Medium Turnip
1 small onion
coconut oil
salt
pepper

Heat oil over medium-high heat in a skillet. Grate turnip. Slice onion. Place onions in skillet and saute' for appx 2-3 minutes. Add turnip, salt, and pepper. Leave for 2-3 minutes and then turn over. Make sure you flip the hashbrowns every 2-3 minutes to make sure they do not overcook or burn. Hashbrowns are ready when golden brown.
I served it with 2 over easy eggs.

Cellular Healing Diet- Zucchini Parmesan



Zucchini Parmesan

2 large zucchini
1 large onion
2 tsp minced garlic
1 pkg of mushrooms (optional)
2 fresh basil leaves chopped
Jar of marinara sauce
8 oz of mozzarella cheese
shredded parmesan cheese

1. Preheat oven to 325°. Thinly slice zucchini and boil for 2-3 minutes or until tender.

2. Drain the zucchini and place in bottom of 9x13 casserole dish.

3. Saute' mushrooms, onion, and garlic in olive oil for 5 minutes.

4. Pour mushrooms, onion, and garlic over the zucchini.

5. Chop basil and sprinkler over the casserole.

6. Pour marinara sauce over the casserole.

7. Sprinkle mozzarella and parmesan cheese over the top.

Bake the casserole for approximately 20 minutes. Cheese should be bubbly and slightly browning on the sides.

Serve it up with a slice of bread from my bread recipe with butter and garlic salt. Mum! As my son Asher would say.

Cellular Healing Diet Hudson, WI- Meatloaf Recipe

Bobbie's Meatloaf Recipe- Cellular Healing Diet Style

2 pounds grass fed ground beef
2 eggs (organic or free range)
2 tsp cumin
2 tsp chili powder
1/2 cup zucchini, shredded (moistens the meatloaf)
4 garlic scapes or 1 tsp minced garlic
1/4 cup raw milk or organic whole milk
1/2 cup quinoa (soaked for at least 2 hours to soften the seeds)
1/2 tsp pepper
1 tsp salt

Topping:
1/3 cup Organic Ketchup (without sugar if possible)
1 tsp mustard (I used stone ground)
2 tsp Xylitol or 1/2 tsp Stevia (I've only used Xylitol)
1/2 tsp chili powder
salt & pepper to taste

Directions:
Preheat the oven to 375°. Mix the ingredients of the meatloaf with your hands until well mixed. The mixture may seem very wet, but it makes the meatloaf so moist without falling apart. Place mixture in a meatloaf pan (I use a glass bread pan). For the topping, just mix all the ingredients together with a whisk and spread over meatloaf. Place in oven and bake for 1 hour. Serves 4-6 people depending on the appetites! I served it with sauteed zucchini and mushrooms in extra virgin olive oil.

Ratings: My husband rated this my best meatloaf ever. My mom rated this the best meatloaf she's ever tasted--- she's my mom, what else is she supposed to say? Don't take their word for it, try it for yourself!




Update for those who follow:
My health is still on track to complete wellness. I'm in the process of getting my amalgams replaced- but still NO SYMPTOMS of Ulcerative Colitis after struggling for 16 years. My husband is running the Stillwater, MN Lumberjack Days 10-mile run today and we were reminiscing of the last time both of us had ran it. I have not ran it since July 2003- BECAUSE I've been sick EVERY SINGLE summer since then (2008 I was pregnant). SO, I'm excited to report that I didn't run it this year because of complete choice not because I couldn't.
